Welsh recipe



1 oz / 30 gr butter

1 oz / 30 gr sugar

¾ pint / 0,4 lt  3% milk

Grated rind of 1 lemon

6 oz  / 170 gr  fresh white breadcrumbs

3 egg yolks

4-5 tablespoons strawberry jam


Set oven to 350 degrees F / 180 degrees C or Mark 4.  Put the milk in a saucepan and add the butter, sugar and grated 1 lemon rind and bring to the boil.

Put the breadcrumbs in a bowl and pour the hot milk mixture over them.

Allow to cool and swell. Stir the egg yolks into the cooled mixture and then spread half into a greased, ovenproof dish.

Melt the jam, pour half of it over the mixture, add the remaining breadcrumbs mixture and finish with a layer of jam.  Bake for 40-45 minutes until set.
