A mix of veg for minestrone

Fresh or frozen veg 600 gr

Garlic 1 clove

Rosemary 1 sprig

Italian Parsley 2 sprigs

Thyme 1 sprig

Olive oil 4 tbsp

Toasted Home made bread 4 slices

Eggs 4

Vegetable broth 1 lt

Grated parmesan cheese as you like



Wash, thyme, rosemary, and parsley.  Chop the leaves with the garlic clove

Put the mixture in a pan with 4 tbsp of oil

Meanwhile fry the vegetables in a casserole dish without oil for a few minutes, mix well during this procedure, be careful to not burn.  Then cover the vegetables with the vegetable broth.  Cook the soup for 40 minutes.  Then add the aromatic mixture add salt mix and relax the mixture for 5 minutes.

Now reheat the mixture   Place one slice of bread on the bottom of each plate, break one egg on each slice of bread, and add the vegetable soup to each bowl over the egg.

Add parmesan to taste and serve
