Croccanti – cookies
flour 800 gr.
sugar 700 gr.
almonds 400 gr.
eggs 8 + 1 for egg-washing
zest of 1 orange
Mix all ingredients together until you obtain a mixture which is not to hard.
Then form loaves approx. 1 to 2 inches. Let relax for 30 minutes.
Brush the surface with the 1 egg-yolk.
Bake in a pre-heated oven at 180 c. or 375 f. until they become golden on the surface about 20 minutes.
Take them out of the oven and cut still warm in a 45 degrease angle on a slant to make lots of biscotti.
After put them back in the oven to toast them for about 10 more minutes.
